necessary ingredients
100 grams (half cup) of rice
2 liters milk
100 grams (half cup) sugar / sugar candy
5 cardamom powder
7 to 8 finely chopped almonds
7 to 8 cashew nuts finely chopped
One tablespoon chironji
7 to 8 slices cut
2 tablespoons grated coconut or coconut powder
5 to 6 leaf saffron (if desired)
Ghee
For decoration
Serve rice kheer with chopped pistachios and almonds.
Method
- First clean the rice and wash it well. Remove all the rice water and keep it in a sieve for 5 minutes.
Now put a spoonful of ghee in a pan and heat it over the gas. And then add rice to it and then fry it for 3 to 4 minutes while stirring with a large spoon on low heat.
Pour milk in a vessel for making kheer and add half a cup of water to it and keep it hot on the gas.
After the milk comes to a boil, add roasted rice to it and cook it on medium flame for 7 to 8 minutes while stirring with a large spoon. Take care not to stick rice in the bottom of the pot.
When the rice melts and cooks well, add sugar to the milk and mix.
After the sugar dissolves, add coconut powder, makhane, almonds, cashew nuts and chironji to the milk and cook on a medium flame for 7 to 8 minutes until the kheer becomes thick.
When the kheer becomes thick, add ground cardamom and saffron, and after cooking on high flame for 2 minutes, turn off the gas.
Rice pudding is ready. Eat it hot or you can serve it cold in the fridge.

pay attention :
If you want a good color of saffron in kheer, soak saffron in half a bowl of warm milk. Mix it with ground cardamom, saffron and raisins in kheer.
- You can also roast cashews and almonds lightly in ghee.
