METHOD
First of all, soak urad dal, gram dal, fenugreek, and rice in water for 12 hours, then remove the water from lentils, fenugreek and rice and remove the peel of urad dal, now add some water to the lentils, fenugreek and rice in a mixer. Make a coarse grind.
Then add baking soda to the paste and keep the paste in a warm place for 12 hours to rise.
Now to make the stuffing for Masala Dosa, put two spoons of oil in a pan, heat the oil, add mustard, curry leaves and fry it, then put green chilies, onions in the oil and fry until golden, now tomatoes, Add red chilli, turmeric, amchur, and salt and cook till tomatoes become soft.
Then add boiled potatoes and cook for 5 minutes, then put green coriander on the spices and turn off the gas.
After making the dosa masala, to make the dosa, now add salt to the paste and heat a nonstick or iron griddle, then wipe the pan with a wet thick cloth and pour 1 tsp oil on it, spread the oil on the pan.
Now put the paste of dosa on the pan with a small bowl and spread the paste very thin in a round shape, then take 2 teaspoons of oil and pour it around the dosa on the pan.
Roast the dosa on medium flame, when the dosa starts to appear cooked from above, then put 2 to 3 spoons of potato masala on it and fold the dosa from the edges with a spoon.
Keep in mind that to make the second dosa, wipe the tawa with a wet cloth so that the tawa is not too hot, if the tawa remains hot, then you will not be able to spread the other dosa on the pan.
Masala dosa is ready, now you eat masala dosa with sambar, peanuts and coconut chutney.
