pav bhaji recipe in cookingfood
2 medium potatoes, chopped (about 1½ cups)
1/2 cup green peas (fresh or frozen)
3/4 cup chopped cauliflower (about 1/4 cauliflower)
1/2 cup chopped carrots (about 1 medium)
1 large onion, finely chopped (about 3/4 cup)
1 tablespoon ginger garlic paste
2 medium tomatoes, finely chopped (about 1¼ cup)
1/2 cup chopped capsicum (about 1 small)
1½ tsp red chilli powder (or less)
1/4 tsp turmeric powder
1 tsp coriander-cumin powder, optional
1 tsp readymade pav bhaji masala powder
1 tsp lemon juice
Salt to taste
2 tablespoons oil + 2 tablespoons butter
Butter to serve
2 tablespoons finely chopped coriander leaves
8 loaf buns to serve
Method (Pav Bhaji Banane Ki Vidhi Hindi Me):
(1) Wash all the vegetables listed in the ingredients in water, wipe them with cloth and cut them into small pieces.
Put chopped potatoes, cauliflower, carrots and green peas in a pressure cooker of 2-3 liters capacity. Add 1/2 cup water and salt as per taste.
(2) Close the pressure cooker lid and let it cook on medium flame for 2-seats. Turn off the gas and allow the cooker to cool down. Open the lid after all the pressure is removed automatically; It will take about 5-7 minutes.
Mash the boiled vegetables with the help of a spoon or potato masher. You can add more or less vegetables as per your choice. The texture of the bhaji will depend on the mashing of the vegetables.
(3) Heat 2-tablespoons oil and 2-tablespoons butter together in a pan on medium heat. Add chopped onion and ginger-garlic paste. Fry the onion till it becomes light pink.
(4) Add chopped capsicum, chopped tomatoes and salt.
Fry the tomatoes and capsicum until they become soft.
Add 1½ tsp red chili powder, 1/4 tsp turmeric powder, 1-tsp coriander-cumin powder and 1-tsp readymade pav bhaji masala powder.
(5) Cook for 1-minute while shaking with a spoon.
(6) Add 3/4 cup water, mix well and let it cook for 2-3 minutes.
(7) Add boiled vegetables and 1 tsp lemon juice.
Mix well and cook for 4-5 minutes. Now taste the bhaji and add more salt if required and mix well. Turn off the gas. Garnish with finely chopped coriander leaves. Bhaji is ready to be served.
(8) Cut the bread buns from the middle with the help of a knife in such a way that it stays connected to the other side. Heat the pan on medium heat. Put 1-tablespoon butter on the griddle and place the sliced loaf buns on top of it and bake until it turns light brown on both sides, it will take about 30 seconds to cook on each side. Put the cooked pavs in a plate and bake the remaining pans in the same way.
(9) Take out the bhaji in a bowl and garnish it with a piece of butter and serve hot with baked pav, chopped onion and lemon.
