First of all cook the milk on high heat till it boils. As it comes to a boil, turn off the heat and after 1 minute, mix the juice of one lemon in it and keep stirring until the milk gets cracked or the chena is separated.

Now sieve the chenna with a muslin or a cotton cloth. Then wash this chisel properly in the right cold water so that the lemon smell comes out of it. You can do this by kneading flour or making rice. It can also be added to vegetables.


Squeeze the chesa water and keep it hanging for 20-25 minutes.


- There should not be too much moisture in the chenna or it should be dry. If this happens then the Chena balls will not be formed in the right shape. If the chenna has become too hard then add 2-4 drops of hot water to it.


After the time, remove the chisel from the cloth and knead it for 4-5 minutes and knead soft or smooth dough.


- Cut 8 small pieces of dough. Roll these balls well with your hands and then flatten them slightly. If the chenna balls are bursting then knead them again and make a dough.


To bring softness to the chena, put 1 cup sugar and 3 cups in a cooker and keep it for boiling.


As soon as it starts boiling, add chenna balls in it and cover it and cook for 7-8 minutes. Do not close the cooker, just cover it from above. If you want, you can also prepare syrup in an open pan. Keep in mind that after 7-8 minutes do not cook at all, otherwise the chenna balls will become hard. Therefore, take care of time.


Milk, condensed milk, chopped dry fruits, kewda water, cardamom powder and saffron are needed to make Rabri.


Keep milk in a pan for heating, keep it on high heat. When it starts boiling turn the heat to medium. Soak saffron with 2 tablespoons of milk. Grandma's grandmother will not know these things to make food tasty.

Now cook cardamom powder, dry fruits, saffron wall milk, kewda water and condensed milk in milk. Keep stirring it to remove the rubbing on the side of the pot. Keep stirring it every 2 minutes.


Now take a small spoon of cornflour and mix it with one fourth teaspoon of cold milk. Pour this mixture into the milk mixture and mix it well. Cook it for 5 more minutes and turn off the heat. Let the rabri cool down. After this, put the chenna balls in this rabdi and keep it in the fridge. Your Rabri will become so tasty that you too will be shocked.
