Ingredients for Shahi Paneer Recipe
Onion = two medium sized, make a paste
Cashew = 15 pieces
Green chili = two
Tomato = make two medium sized purees
Ginger garlic paste = 1 tablespoon
Fresh curd = 4 tablespoons
Cream = four tablespoons, frozen over milk, you can also use fresh cream
Black pepper = eight
Cumin = one teaspoon
Large cardamom = one
Small cardamom = 3
Bay leaf = one
Cinnamon = two small pieces
Salt = one teaspoon
Kashmiri red chilli powder = one teaspoon
Garam masala powder = half a teaspoon
Desi Ghee = 4 to 5 Tablespoons, you can also take plain ghee, refined or butter.
Milk = a cup

To make Shahi Paneer, firstly grind the onion, cashew and green chili and make a fine paste. Put ghee in the pan and heat it. When the ghee is hot, add all the proven spices and fry it while stirring it for 15 to 20 seconds. So that the flavor of all the hot spices comes well in our ghee.
Now add onion, cashew and green chilli paste to it and make the gas flame medium. Stir fry until it turns light-pink on medium flame, it is important to keep stirring the spices as if we do not stir then the cashew nuts will start sticking down.
After frying the onion for 3 to 4 minutes, now add ginger-garlic paste and stir fry for 2 to 3 minutes. So that the rawness of ginger and garlic ends.
Now add red chili powder, garam masala powder and salt to the spices and mix while stirring; Now add tomatoes as well, fry it till all the tomato water is gone.
Keep the flame of gas medium and fry the spices while stirring well. When all the water in the tomato is exhausted and oil starts appearing in it, then add curd and cream to it and mix it well while stirring.

When oil starts to appear in the spices, then add 2 to 3 tablespoons of water to it and add cheese as well. Fry the paneer by mixing it well with the spices while stirring for 2 to 3 minutes, so that the spices test inside the paneer.
After three minutes add milk to it because we have made shahi paneer. That is why I have put all the royal things in it, I have put milk here, if you want, you can also add water to it.
Turn the flame of the gas to high and let the milk come to a boil and keep stirring it continuously. After adding milk, keep in mind that it has to be stirred continuously, by doing so, the milk does not burst at all.
Often people complain that whenever they add milk to the gravy, the milk starts bursting. (This is a tip, always remember this whenever you add milk to any gravy. So keep the flame of gas high and allow it to come to a boil while stirring continuously.) Take the flame after a boil in the gravy. Allow to cook for 5 to 7 minutes.
