Ingredients Required
3 cups rice 1 cup urad lentils tsp baking soda (baking soda) salt oil to taste
Method-
Clean and wash the rice and urad dal and keep it soaked in water for 6 to 7 hours or overnight. Then take out the water from the rice and grind it in a mixer and prepare a paste. Take out the water of urad dal, grind it in a mixer and make a paste. Now put the paste of rice and lentils in a vessel, mix while whisking with a big spoon and prepare a thick mixture. After this, after mixing salt and baking soda in the mixture, cover the paste and keep it in a warm place for 13 to 14 hours to rise. After the yeast rises in the mixture, stir it with a spoon, if the paste seems too thick, then add some water and mix it well. Fill the prepared mixture by applying light oil in the molds for making idli. Now put 2 cups of water in a pressure cooker or idli making vessel and heat it by keeping it on the gas. cover it. Cook the idli on high flame for 8 to 10 minutes. After that reduce the gas. Take off the lid and try. If the idlis are puffed up and made well, then put the back of a knife or spoon in the idlis. If the paste sticks on it, cover the pot and cook the idli for some more time. If the knife or spoon comes out clean, then remove the lid and take out the idlis from the mold in a plate. Similarly, make idlis of all the mixture and serve hot with sambar and coconut chutney.
